Post workout lunch! Just put a bunch of stuff together and it turned out delicious! Roasted sweet potato, tuna salad and black beans over a bed of spinach. For the tuna salad I just mixed 1/2 cup tuna, mashed avocado, 1/2 tbsp mayo, 1/2 tbsp mustard, and little pieces of bell pepper and onion. I will definitely be making this again!
